Towards the end of the summer the pine nut becomes mature of course you need to have and know experience on how to detect maturity of the cone and seed at this point. You have approximately ten days before the cone begins to open up, that the pine nut is completely mature inside. By this you can pick the cone straight from the tree while it is still closed and gummy with pine gum and with the color green. You can pick the cone directly from the tree, place it in a burlap bag, lay it out in the sun for approximately three weeks to allow it to dry up to begin to extract the pinenut / pinon from the cone. You can hit the bag around on the ground and nuts will spring out of the cone from within the bag. You can empty the bag in a small tub or in a container and seperate the nuts and enjoy them.
